In Lao culture, it is considered impolite to let a guest leave without offering them food. Sliced fruit is the most common and respected offering. Fruit is a primary component of 'Sankathan' (offerings to monks). It represents the purity of nature and the intention of the giver. Fruit shakes (Māk mai pan) are a staple of Lao nightlife and street markets. They are often mixed with condensed milk and syrup. Many Lao people believe in the 'hot' or 'cold' properties of fruits. For example, durian is 'hot' and should be balanced with 'cold' mangosteen.
