You could theoretically use it with other nouns, but it sounds weird. For example, बूढ़ी औरत (boodhi aurat) means 'old woman,' which is direct. But बूढ़े is most strongly associated with parents. The phrase माता-पिता (mata-pita) is standard for 'parents.' So, बूढ़े माता-पिता is the most natural and common pairing.
