पंजाबी छोले मसाला एकदम सिंपल तरीके से
हमने इसे बनाया है यदि जो पहली बार भी बना
रहा है तो इसे आसानी से बना सकता है
नमस्ते दोस्तों स्वागत है आपका श्याम रसोई
में तो चलिए शुरू करते हैं बनाना छोले
मसाला बनाने के लिए हमने यहां एक कप छोले
को आठ से 10 घंटे के लिए पानी में भिगा
दिया था सुबह बना रहे हैं तो रात को ही
भिगा दीजिएगा छो को हम कुकर में डाल देंगे
और इसमें हम दो से ढाई कप के करीब पानी
डाल देंगे अब इसमें कुछ खड़े मसाले
डालेंगे हमने यहां एक तेजपत्ता लिया है एक
बड़ी इलायची ली है इलायची को थोड़ा सा
खोलकर डालिए ताकि इसका फ्लेवर पानी में
अच्छे से आ जाए एक छोटा टुकड़ा दालचीनी का
और तीन से चार लौंग ले लीजिए अब हम इसमें
एक छोटा चम्मच नमक डालेंगे आप चाहे तो दो
पिंच बेकिंग सोडा भी डाल सकते हो पर मैं
सोडा नहीं डाल रही हूं अच्छे से इसे मिक्स
कर लेंगे और अब हम मीडियम फ्लेम पर लगभग
पांच से छह सीटी लगाएंगे गैस की फ्लेम को
मीडियम रखिएगा सीटी आने के बाद जब कुकर
में से प्रेशर पूरी तरह से निकल जाएगा तब
ही हम इसे खोलेंगे तो तब तक हम बाकी
तैयारी कर लेते हैं हमने यहां दो मीडियम
साइज के टमाटर दो मीडियम साइज के प्याज 1
इंच अदरक का टुकड़ा दो हरी मिर्च और सात
से आठ छोटी वाली लहसुन की कली ली है तो
