Tea is the national drink. An average Kazakh drinks 6-10 cups of tea a day. 'Ащы шай' is the foundation of the 'dastarkhan' (feast). In the south, tea is almost always served with milk and is brewed to be extremely 'ащы' to cut through the richness of the milk. Historically, tea was brewed in large kettles over a fire. The 'ащы' taste was a sign that the tea was fresh and the leaves were of high quality. In cities like Almaty, 'ащы шай' is now often ordered as 'Americano-style' black tea in modern coffee shops.
