The 'Sampeah' is the most important part of the greeting. There are five levels of Sampeah based on the status of the person you are greeting. For 'Arun Soursdey', you will most likely use Level 1 (peers) or Level 2 (elders/bosses). Traditional Cambodians often greet by asking 'Nyam bay nov?' (Have you eaten rice yet?). This is a sign of care and community. 'Arun Soursdey' is seen as a more modern, 'educated' way to greet. Avoid touching someone's head when greeting them. The head is considered the most sacred part of the body, while the feet are the lowest. Saying 'Arun Soursdey' while standing over someone is considered impolite; try to lower your head slightly. In the morning, it is common to see people offering food to monks. If you greet a monk, do not use 'Arun Soursdey'. Instead, use the specific royal/monk language (Racheasap).
