Norwegians often switch to English when they hear a foreigner struggling. To truly 'lære norsk', you must politely ask them to continue in Norwegian. There are two written forms: Bokmål and Nynorsk. Most foreigners 'lære norsk' via Bokmål, but you will encounter Nynorsk in government and certain regions. Dialects are a point of pride. Even if you 'lære norsk' perfectly in class, you might not understand someone from Bergen or Trondheim immediately. The 'Norskprøve' is the official exam. For many, 'lære norsk' is synonymous with preparing for this high-stakes test.
