Sourness is often balanced with 'Ambel Tik Trei' (chili fish sauce) or 'Ambel Mtes' (chili salt). The phrase 'ជូរណាស់' is usually followed by a reach for the salt bowl. The 'Samlor Mchu' (Sour Soup) is considered a national comfort food. Every family has their own level of 'ជូរណាស់' that they prefer, often using different souring agents like 'Sloeuk Ampil' (tamarind leaves). Eating sour fruit is a communal activity for Khmer women and students. It's a way to bond and stay awake during long afternoons. Sour foods are sometimes believed to help with digestion or to 'wake up' the blood, though too much 'ជូរណាស់' is said to be bad for the stomach.
