Contexto cultural
Dutch people value their 'nachtrust' (night rest) and are very direct about it. It is not considered rude to tell a host you'd rather sleep. Flemish speakers might use 'Ik ga liever slapen' but often soften it with more polite introductory phrases compared to the Dutch. In Surinamese Dutch, the phrase is used but might be mixed with Sranan Tongo expressions of tiredness like 'mi weri' (I am tired). Many expats find this phrase shocking at first because of its bluntness, but they soon adopt it as a useful tool for social survival.
The 'Dan' trick
If you want to be specific, add 'dan' (than) to show what you are rejecting: 'Ik ga liever slapen dan nog een biertje drinken'.
Don't over-apologize
In the Netherlands, a simple 'Ik ga liever slapen' is enough. You don't need to say 'sorry' ten times.

Make sure it sounds like a 'v' and not an 'f', or it might sound like 'liefer' (which isn't a word).
